Pickled Ramps Recipe!

Well, hello! I did have a lovely visit in DC. And to think, if you were around we could be selling our asparagus tarts and jarred treats here. OH WELL.

I am glad that you like all of your treats. Although those ramps were for JUNE. I adapted the recipe from Serious Eats, I wanted something a little more spicy and savory. So it went something like this….

Pickled Ramps

  • 1cup water
  • 1 cup white wine vinegar
  • 1 tsp peppercorns (I think mine were white).
  • 1 tbs salt
  • 2 bay leaves
  • 1 sprig of thyme
  • 1/4 tsp Cayenne pepper
  • 3 cloves chopped garlic

Bring pot of water to boil for jarring components (jar & lid) and boil.

Rinse ramp bulbs under cool running water. Blanche quickly (30s-1min) in boiling salted water. Then “shock” in ice cold water. I left my ramps in the icy water while preparing the brine.

Bring water and vinegar to a boil. Add salt, peppercorns, cayenne. While boiling, remove jarring components from boiling water (tongs are useful here). Add dry chopped garlic, bay leaves, and thyme sprig to jar.

Remove ramps from ice water and add to jar with dry ingredients. Pour brine into jar, close lids.

Voila! The whole things was pretty easy, probably took around 15 min.
